Ginger Beer Creamsicles

Ginger beer, vanilla, raspberry ice cream popsicles form Southern FATTY.

Ingredients
  • 1 ginger beer (I prefer Bundaberg, but any ginger beer works)
  • 1½ cups vanilla ice cream
  • 1 cup raspberries (frozen works best)
Instructions
  1. Place popsicles mold with lid off to load.
  2. Place ice cream in a bowl and stir to soften.
  3. I prefer to place ice cream in a piping bag for easier loading.
  4. Pipe some ice cream into bottom of molds.
  5. Place a couple raspberries in mold. You can press whole berries into mold. They will release after frozen.
  6. Continue layering with ice cream and berries. Leave about ¼ of the mold empty at the top of the molds.
  7. Finish with ginger beer. Allow foam to settle.
  8. Place on top with sticks and freeze.
