Homegrown Tomato Salsa
- 3 cups tomatoes, seeded & diced
- ¾ cup onion, diced
- ½ cup red pepper, seeded & diced
- 3 tablespoons cilantro, chopped
- 1-2 garlic cloves, minced
- 1 jalapeƱo pepper, diced (more or less for heat preference)
- 1 lime, juiced (small - about 1 tablespoon)
- 1 teaspoon salt
- ½ teaspoon cumin
- ½ teaspoon pepper
- 2 teaspoons brown sugar, optional
- Combine all of above.
- Add the brown sugar if needed to cut the acidity of the tomato.
- Keep refrigerated.
- Best served after a day for flavors to mix.
